Chicago is a definitely a food lover’s town and I’ve been asked a few times while we’ve been in Miami if I miss the food but I’ve had some really great food here as well. About a week ago, a group of us went to @The River Seafood and Oyster Bar (http://www.therivermiami.com/) after the Heat game and one of the items we ordered was the kale salad. I have to say it was my favorite thing we ate besides the actual oysters. I was craving it so I decided to try to make my own. While it was different from the original (I didn’t include bacon and I made up the dressing), my husband and I both really enjoyed it. Since we are renting a place down here without any measuring utensils I just eye-balled the ingredients so I don’t have an exact recipe. Here are the basics:
– 1 bunch kale (use organic if possible), leaves and stems removed
– 1 granny smith apple cored and cut into cubes
– 6 small beets boiled until soft, peeled, and cubed
– 1-2 handfuls of toasted walnuts
For the dressing:
2 parts olive oil, to 1 part red wine vinegar, 2 cloves minced garlic, 1 minced shallot, 3/4 container blue cheese crumbles, pepper
